Depending on the area of application, potato flakes are produced in a wide range of different varieties. However, irrespective of the specific application, potato flakes always stand out thanks to their ability to absorb a large amount of water, their solubility in cold water and in particular, the light and loose consistency of the final product.
The application scopes for potato flakes in the food industry are diverse, e.g. instant mashed potato, gnocchi, but also snacks, numerous frozen products or baby food.
A further important application field for potato flakes is their use as a thickening agent, especially in instant sauces or soups.
