Pectin can be produced from pomace or from the skins of citrus fruits. The polysaccharide can be used for a wide range of applications in the food industry and is also suitable for use as a gelling agent or thickening agent. Pectin is primarily used if a food contains fruit. Examples are jams or fruit fillings.
However pectin is also used in confectionary, in dairy or soya products, sauces and drinks.
