Produced from brown algae, alginates are polysaccharides. Their application scope is diverse; they are not only used as emulsifiers or gelling agents, they are also used as thickening agents or coatings.
The products in which alginates are used are just as varied as the application purposes. To name a few: diet and light products, baked goods, frozen goods such as ice cream, soups and sauces. Finally, alginates are frequently used in canned foods.
